This dish is summer perfection. It has a very tropical taste to it from the mango, and it’s a refreshing meal after walking around on a hot day. Not to mention, it takes about 5 minutes to prepare.
- 1 cucumber, peeled and diced
- 2 tablespoons white balsamic vinegar
- 3-4 cups imitation crab meat
- 2 cups frozen mango, thawed and cut into chunks
- 1 tbs. chopped parsley
- 1/4 cup olive oil
- salt and pepper
Combine everything in a bowl, toss, and ENJOY!
