I love a fresh, homemade salsa, and this one tastes like summer on a tropical island. That’s pretty convenient, if you can’t actually find the time to get to that tropical island. And this is a whole lot cheaper to make than booking a vacation.
To start, dice up
- 1/2 cup frozen pineapple
- 1/2 cup frozen mango (*Let these thaw or microwave ’em like I did if you don’t have the patience!)
- 1 large tomato
- 1/2 red onion
- 1 cucumber
Combine all of this in a bowl, and then add
- juice from 1 lime
- dash of red pepper (more depending on how spicy you want to get)
- a little salt
Serve your delicious, fresh salsa over a bed of lettuce, fake crab meat (I use this stuff a lot I guess!), or tofu, and add a few tortilla chips to top it all off! Enjoy being transported to paradise!
