Almond Chocolate Snowballs

Snowballs in the summer?

Why yes, if they are of the almond and chocolate variety.

This recipe is soooo easy (no baking and minimal ingredients!), but these little “snowballs” are delicious. If you’re wondering about the name, the coconut flakes reminded me of snow. Thus, they are snowballs!

Ingredients (Makes 8-12):

  • 1 cup almond flour (I used a Bob’s Red Mill version)
  • 1/2 cup pitted dates
  • 2 tbsp almond milk
  • 2 tbsp unsweetened cocoa powder
  • unsweetened coconut flakes

In a food processor, combine the almond flour and dates until it forms a mealy consistency. Then, add the cocoa powder and the almond milk. Process until it forms a dough. On a sheet of wax paper, spread out coconut flakes. Spoon out a little of the dough and roll into balls through the coconut so that it sticks. Enjoy right away or refrigerate your snowballs! ENJOY!
